Savor the taste of summer all year round with our zesty mango jam. Sweet mango and vanilla meld with a touch of lime for a perfect blend of flavors. Enjoy on toast or drizzle over ice cream for a delightful treat anytime.
Ingredients:
  • 4 mangoes (about 1.5kg), pitted, peeled and thinly sliced
  • 2 large limes
  • 370g (1¾ cups) caster sugar
  • 1 vanilla bean, split, seeds scraped
Instructions:
  • In a large saucepan, combine mango, finely grate the rind of 1 lime, juice the lime halves (reserving one half) and add 80ml (1/3 cup) lime juice. Cook over medium heat for 5 minutes until soft and pulpy. Use a potato masher to roughly mash any larger mango chunks.
  • Blend in the sugar until it dissolves completely, then mix in the vanilla bean and seeds, along with the squeezed lime half. Simmer over medium-high heat for 8-10 minutes, until the jam thickens on a chilled saucer. Be cautious of spattering while cooking.
  • Discard lime half and vanilla bean, then stir in the zest. Transfer the jam to sterilized jars, seal tightly, and cool. Refrigerate for up to 1 month after opening.
