Mango Cake

Easy mango cake with Bisquick® mix, topped with coconut and nuts - a quick and tasty dessert in under an hour.
Ingredients:
  • 1 2/3 cups Original Bisquick™ mix
  • 1/2 cup granulated sugar
  • 1/3 cup milk or water
  • 2 tablespoons vegetable oil
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground nutmeg
  • 1 egg
  • 1 cup diced mango
  • 1/2 cup flaked coconut
  • 1/3 cup packed brown sugar
  • 1/4 cup chopped macadamia nuts
  • 3 tablespoons butter or margarine, softened
  • 2 tablespoons milk
Instructions:
  • Preheat your oven to 350°F. Grease a 9-inch round cake pan or 8-inch square pan, then dust with Bisquick mix. Using an electric mixer, combine all cake ingredients (except mango) in a large bowl on low speed for 30 seconds, then switch to medium speed and beat for 4 minutes, occasionally scraping the bowl. Gently fold in the mango, then pour the batter into the pan.
  • Bake until a toothpick inserted in the center comes out clean, about 30-35 minutes.
  • In a small bowl, thoroughly blend all topping ingredients. Spread the topping over the warm cake.
  • Place the cake under the broiler, keeping the top about 3 inches from the heat source, for about 3 minutes or until the topping turns a golden brown. Allow the cake to cool for 30 minutes before serving. For an extra touch, top with sweetened whipped cream when serving.
