Mango Cake with Olive Oil and Greek Yogurt

Moist and flavorful mango cake made with olive oil, butter, and Greek yogurt.
Ingredients:
  • 1 cup white sugar
  • 0.25 cup unsalted butter, softened
  • 0.25 cup olive oil
  • 1 medium egg
  • 1 tablespoon brandy
  • 2 cups all-purpose flour
  • 0.25 teaspoon salt
  • 0.25 teaspoon ground cinnamon
  • 0.5 cup Greek yogurt
  • 0.5 cup milk
  • 2 medium mangoes, peeled and diced
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and grease a 9-inch springform cake pan.
  • In a large bowl, cream together sugar, butter, and olive oil until light and fluffy for 3 to 5 minutes. Then, stir in the egg and brandy.
  • In a different bowl, blend together flour, baking powder, baking soda, salt, and cinnamon. Add this flour mixture to the wet ingredients alternatively with yogurt and milk, stirring until just combined. Carefully fold in mango. Spread the thick batter into the prepared pan.
  • Bake in the preheated oven for 45-50 minutes until a toothpick inserted into the center comes out clean. Let it cool on a wire rack for 5 minutes, then run a knife around the edges to loosen. Carefully invert it onto a serving plate or cooling rack and allow it to cool completely.
