Delightfully Exotic Mango Cake

Moist and delicious mango cake with sweetened mango pulp and almond topping - a delightful treat!
Ingredients:
  • 1.5 cups canned sweetened mango pulp
  • 0.5 cup margarine
  • 2 medium eggs
  • 1 teaspoon baking powder
  • 2 tablespoons whole almonds, or as desired
Instructions:
  • Preheat your oven to a toasty 375 degrees F (190 degrees C) and generously grease a 9x13-inch baking dish.
  • Combine mango pulp, sugar, margarine, and eggs in a bowl and beat with an electric mixer on medium speed for 3 to 5 minutes until light and well mixed.
  • In a bowl, sift together flour, baking powder, and baking soda. Stir in the mango mixture until just combined. Pour the batter into the prepared baking dish.
  • After preheating the oven, bake for 15 minutes. Carefully place almonds on top of the batter. Bake for an additional 20 minutes or until a toothpick inserted in the center comes out clean.
