Try these tropical cupcakes made with Bisquick® and frosted with fluffy white frosting for a delightful dessert with exotic flavors.
Ingredients:
  • 1/2 cup sugar
  • 1/3 cup butter or margarine, softened
  • 1/3 cup milk
  • 2 tablespoons lime juice
  • 1 teaspoon vanilla
  • 1 cup coarsely chopped mango (from 20-oz jar)
  • 1 tablespoon finely grated lime peel
  • 1 tub (12 oz) Betty Crocker™ Whipped Fluffy White Frosting
  • 2 tablespoons finely chopped crystallized ginger
  • 1/2 cup flaked coconut, toasted
Instructions:
  • Preheat the oven to 375°F and line 18 regular-size muffin cups with paper baking cups.
  • In a large bowl, blend all cupcake ingredients using an electric mixer on low speed for 30 seconds. Increase to medium speed and mix just until the mango is fully incorporated, for approximately 1 minute. Distribute the batter evenly among the muffin cups, filling each about 2/3 full.
  • Bake for 25 to 30 minutes until golden brown on top and a toothpick inserted into the center comes out clean. Let cool for 5 minutes, then transfer from pans to cooling racks to cool completely.
  • Blend ginger with frosting in a small bowl. Frost cupcakes and top with coconut.
