Create tropical pina colada cupcakes with pineapple, coconut, and vanilla extracts for a refreshing taste without the alcohol.
Ingredients:
  • 1.75 cups cake flour
  • 1.25 cups all-purpose flour
  • 2 cups white sugar
  • 1 tablespoon baking powder
  • 0.75 teaspoon salt
  • 1 cup butter, cut into cubes
  • 4 large eggs
  • 1 cup whole milk
  • 1 teaspoon vanilla extract
  • 1 teaspoon coconut extract
  • 1 teaspoon pineapple extract
Instructions:
  • Preheat the oven to 325 degrees F (165 degrees C) and prepare 36 muffin cups with paper liners.
  • In a large mixing bowl, whisk together cake flour, all-purpose flour, white sugar, baking powder, and salt until combined. Using a hand mixer on Low speed, mix for about 3 minutes. Add butter and mix until butter chunks are coated with flour.
  • Add one egg to the flour mixture at a time, making sure each egg is fully incorporated before adding the next one. Keep beating until a cake batter forms.
  • Gradually pour in milk, vanilla extract, coconut extract, and pineapple extract while mixing, scraping down the sides of the bowl, until well combined. Fill paper liners two-thirds full with batter.
  • Bake in the oven until a toothpick inserted in the center comes out clean, for 17-20 minutes.
