Strawberry Tiramisu Without Eggs

Egg-free, alcohol-free Strawberry Tiramisu: A luscious blend of fresh strawberries, cream cheese, and whipped cream that can be prepped ahead for a delightful treat.
Ingredients:
  • 3.5 cups fresh strawberries, hulled, divided
  • 7 tablespoons white sugar, divided
  • 2 lemon, juiced, divided
  • 2 tablespoons water, or as needed
  • 2 (8 ounce) packages cream cheese, softened
  • 1 cup heavy whipping cream
  • 0.5 (12 ounce) package ladyfinger cookies, or more as needed
Instructions:
  • Set aside 3 or 4 strawberries for garnish. Slice the rest, then mix with 2 tablespoons of sugar and juice from 1 lemon in a bowl. Mix well and set aside.
  • Combine the remaining strawberries, 2 1/2 tablespoons of sugar, and the rest of the lemon juice in a blender. Blend until smooth.
  • Pour the strawberry puree into a small saucepan and cook over gentle heat, stirring occasionally, until it thickens to a saucy texture, which should take 5 to 10 minutes. Taste to check sweetness and adjust with more sugar if needed. If the sauce is too thick, add a splash of water. Once ready, take off the heat and allow it to cool thoroughly.
  • In a large bowl, mix cream cheese and 2 1/2 tablespoons sugar until smooth and creamy using an electric mixer. In a separate bowl, whip cream until soft peaks form, then gently fold it into the cream cheese mixture.
  • Create a snug layer of ladyfingers in a square glass dish. Drizzle half of the strawberry sauce over them. Spread half of the cream cheese mixture on top. Place half of the marinated sliced strawberries over the cream cheese. Repeat with remaining ladyfingers, sauce, and sliced strawberries. Finish by spreading the remaining cream mixture evenly over the top and garnishing with reserved strawberries.
  • Chill tiramisu in the refrigerator, covered with plastic wrap, for at least 4 hours, or overnight for best results.
