Indulge in guilt-free strawberry tiramisu cups for a delectable post-meal treat.
Ingredients:
  • 185ml (3/4 cup) strong espresso coffee
  • 60ml (1/4 cup) marsala
  • 8 savoiardi (sponge finger biscuits), halved
  • 1 x 375g ctn reduced-fat smooth ricotta
  • 32.00 gm brown sugar
  • 1 egg white
  • Cocoa powder, to serve
  • Strawberries, hulled, washed, quartered, to serve
Instructions:
  • Mix the coffee and half of the marsala in a bowl. Dip each biscuit into the coffee mixture one by one and use them to line the bases of eight 125ml (1/2-cup) serving glasses. Finish by drizzling the remaining coffee mixture over the biscuits.
  • In a medium bowl, mix ricotta, brown sugar, and remaining marsala. In a separate clean, dry bowl, whisk egg white and caster sugar until soft peaks form. Gently fold the whipped egg white into the ricotta mixture using a metal spoon. Spoon the mixture into serving glasses, cover with plastic wrap, and chill in the fridge for 2 hours.
  • Garnish tiramisu with a dusting of cocoa powder and fresh strawberries before presenting.
