Quick and easy tiramisu with fresh strawberries and mint - a crowd-pleasing favorite!
Ingredients:
  • 200g mascarpone cheese
  • 18.00 gm icing sugar mixture, sifted
  • 1/2 tsp instant coffee powder
  • 20.00 gm boiling water
  • 45.00 gm brown sugar
  • 82.50 ml marsala (see note)
  • 250g strawberries, hulled, cut in half lengthways
  • 8 sponge finger biscuits
  • fresh mint sprigs, to serve
Instructions:
  • Combine mascarpone and icing sugar in a bowl, then beat with a wooden spoon until smooth.
  • In a cup, mix coffee powder with boiling water until dissolved. Next, combine the coffee mixture with brown sugar and Marsala in a medium frying pan. Cook over medium-high heat, stirring, for 2 to 3 minutes until the sugar is dissolved.
  • Lower the heat to medium-low and toss in the strawberries. Stir gently while cooking for about 1 minute until the strawberries are just slightly softened. Take the mixture off the heat and let it sit for 10 minutes to cool down a bit.
  • Plate the biscuits elegantly. Pour the delicious syrup from the pan over them. Spoon the luxurious mascarpone mixture on top followed by fresh strawberries and a sprig of mint. Finish with an extra drizzle of syrup. Serve and enjoy!
