Strawberry Lemonade Cobbler

Quick strawberry cobbler with whipped lemon curd topping - a refreshingly sweet treat.
Ingredients:
  • 6 cups halved fresh strawberries
  • 1/4 cup cornstarch
  • 1/4 cup frozen (thawed) lemonade concentrate (from 12-oz can)
  • 1 cup Original Bisquick™ mix
  • 2 tablespoons sugar
  • 1/4 cup milk
  • 1 tablespoon butter or margarine, softened
  • 1 teaspoon grated lemon peel
  • 1/2 cup Cool Whip frozen whipped topping, thawed
  • 1/4 cup lemon curd (from 10-oz jar)
  • Additional grated lemon peel, if desired
Instructions:
  • Preheat the oven to 400°F. Grease 6 (8-oz) ramekins. In a medium bowl, combine strawberries, cornstarch, and lemonade concentrate until well mixed. Divide 1 cup of filling into each ramekin. Arrange the ramekins on a cookie sheet.
  • Combine Bisquick mix, 1 tablespoon of sugar, milk, butter, and 1 teaspoon of lemon peel in a small bowl. Mix with a fork until a soft dough forms. Drop heaping tablespoonfuls of dough onto the strawberry mixture. Sprinkle with the remaining 1 tablespoon of sugar.
  • Bake for 18 to 20 minutes, or until the filling is bubbling and the topping is beautifully golden brown.
  • Combine the whipped topping and lemon curd in a small bowl. Top with extra lemon peel and serve with the warm cobbler.
