Vibrant pink lemonade made with whole lemons and strawberries, perfect on its own or as a mixer for summer cocktails.
Ingredients:
  • 2 thin-skinned lemons (3 to 3 1/2 ounces each)
  • 10 ounces strawberries, hulled (about 2 cups hulled)
  • 1/2 cup sugar
  • 4 cups cold water, divided
  • Ice, for serving
Instructions:
  • Prepare the lemons: Wash them thoroughly under warm water to remove any dirt or wax. Trim the hard stem end, cut the lemons into quarters, and remove the seeds. Cut the lemon quarters into chunks. For thicker-skinned lemons or those with a nubby blossom end, trim to reduce bitterness.
  • Place the prepared lemons, strawberries, sugar, and 2 cups of water into the blender pitcher.
  • For a refreshingly smooth lemonade, blend on high speed for about 30 seconds until perfectly smooth.
  • Strain the lemonade through a fine-mesh sieve into a pitcher, pressing the pulp with a silicone spatula to extract all the juice. Discard the pulp if desired.
  • Pour the remaining 2 cups of water into the lemonade and mix well. Serve the refreshing lemonade over ice.
