Strawberry tiramisu

Indulge in a delectable strawberry treat!
Ingredients:
  • 375g strawberries, hulled, sliced
  • 62.50 ml strawberry liqueur (see notes)
  • 37.50 gm pure icing sugar, sifted (see notes)
  • 1/2 x 450g madeira cake, cut into 2cm cubes
  • 84.15 gm mascarpone, softened
  • 252.50 gm thickened cream, whipped
Instructions:
  • Puree 125g strawberries, liqueur, and 2 tablespoons icing sugar until velvety. Set aside 1 1/2 tablespoons of the mixture. Place the cake on a large plate and generously drizzle the remaining strawberry mixture over the top.
  • In a large bowl, combine mascarpone and remaining icing sugar. Stir until mixed, then gently fold in whipped cream until fully incorporated.
  • Divide half of the cake mixture evenly among four 1-cup capacity serving glasses. Layer with half of the cream mixture and half of the remaining strawberries. Repeat the layers with the rest of the cake mixture, cream, and strawberries. Finish by drizzling with the reserved strawberry mixture. Serve and enjoy.
