Delectable mango cakes - perfect for snacking or dessert with loved ones!
Ingredients:
  • 90g unsalted butter, softened, plus extra melted butter to grease
  • 1 large mango, peeled, thinly sliced
  • 185g caster sugar
  • 2 eggs, beaten
  • 60g self-raising flour
  • 13.60 gm desiccated coconut
  • 2 tsp grated lime rind
  • 40ml (2 tbsp) coconut milk
  • 1 lime, juiced
  • Pouring cream, to serve
Instructions:
  • Preheat your oven to 190°C.
  • Coat four 250ml (one cup) muffin holes with luscious melted butter.
  • Arrange the mango slices to completely cover the base of each muffin hole.
  • In a mixer, combine butter and 120g of sugar and beat until light and pale. Gradually mix in the eggs, then fold in the flour. Add coconut and lime rind, pour in the milk, and gently stir to combine everything. Divide the mixture into muffin pans and bake for 20-25 minutes until golden and cooked through (check with a skewer).
  • In a saucepan over low heat, stir together lime juice, 125ml (1/2 cup) water, and the rest of the sugar until sugar dissolves. Increase heat to high and simmer for five minutes. Let it cool slightly before using.
  • Drizzle the syrup over the cakes in the pan and allow them to cool for 10 minutes. Invert onto a baking tray to catch any remaining syrup and serve with cream.
