Capture summer with homemade mango jam, a versatile sweet treat for all seasons. Easy mango canning recipe.
Ingredients:
  • 2 pounds ripe mangoes
  • 1.5 cups white sugar
  • 0.75 cup water
  • 3 saffron threads
Instructions:
  • Assemble all ingredients.
  • Make 4 to 5 slits in the mangoes and microwave on High for 1 to 2 minutes, or until soft and juicy.
  • Peel and remove the seed from the mango, then place the pulp in a large bowl. Mash the pulp well using a fork or potato masher.
  • Combine sugar and water in a large saucepan over low heat until it boils. Increase heat to medium-high once boiling, and cook until fine, soft threads form at 270 degrees F (135 degrees C).
  • Combine the mango pulp and saffron threads, then simmer until the mixture thickens, approximately 5 minutes.
  • Transfer the freshly cooked jam into clean, sterilized jars and close them tightly following proper canning instructions.
