Savory portabella mushroom and bell pepper tacos with zesty seasoning. Garnish with creamy avocado, juicy tomatoes, and a splash of lime for a delightful vegetarian meal.
Ingredients:
  • 3 portabella mushrooms, thickly sliced
  • 1 red capsicum, seeded, thinly sliced
  • 1 red onion, cut into wedges
  • 20.00 gm taco seasoning
  • 2 garlic cloves, crushed
  • 36.40 gm extra virgin olive oil
  • 8 small flour tortillas
  • 1/2 baby cos lettuce, shredded
  • 125g cherry tomatoes, quartered
  • 1 avocado, stoned, peeled, thinly sliced
Instructions:
  • Preheat your oven to 200°C and line a baking dish with parchment paper. Toss mushrooms, bell peppers, onions, taco seasoning, garlic, and oil in a large bowl until combined. Transfer the mixture to the prepared dish and roast for about 15 minutes or until the vegetables are tender.
  • Heat up a barbecue grill or chargrill on high heat while you cook the tortillas for about 2 minutes on each side until they are nicely charred.
  • Place tortillas on individual serving plates. Layer them with crisp lettuce, savory mushroom mixture, ripe tomato slices, and creamy avocado.
