Celery, lemon and parsley spoon salad

Dice fresh, crisp summer vegetables finely like salsa. Serve with spoons for easy enjoyment.
Ingredients:
  • 2 celery stalks
  • 1/2 telegraph cucumber, peeled, seeds removed, cut into 5mm cubes
  • Zested rind of 2 lemons, plus 2 tbsp juice
  • 82.50 ml finely chopped flat-leaf parsley leaves
  • 20.00 ml baby salted capers, rinsed
  • 20.00 ml finely chopped toasted pecans
  • 60ml olive oil
Instructions:
  • If needed, peel the celery strings, then halve lengthwise and finely chop. Consider finely chopping any celery leaves and mixing them with the parsley for an extra burst of celery flavor.
  • Combine celery, cucumber, lemon zest, parsley, capers, and pecans in a large bowl. Mix well.
  • Combine the lemon juice, olive oil, salt, and pepper in the salad and mix thoroughly. Strain any extra juices before serving.
