Whip up a hearty winter salad with celery root that improves with time for a long-lasting healthy meal.
Ingredients:
  • 1 pound celery root
  • 3 tablespoons rapeseed oil
  • 2 tablespoons lemon juice
  • 1 tablespoon white wine vinegar
  • salt and freshly ground black pepper to taste
Instructions:
  • Peel and quarter the celery root, then cook it in lightly salted water until tender. Drain and let cool, then slice and add to a salad bowl.
  • Whisk together oil, lemon juice, vinegar, salt, and pepper in a small bowl. Drizzle the dressing over the celery root and let it marinate for a minimum of 2 hours to enhance the flavors.
