German Winter Celery Root Salad: Cooked celeriac mixed with onion and a tasty oil and vinegar dressing.
Ingredients:
  • 2 celeriac (celery root), peeled and cut into quarters
  • 2 cups water
  • 1 tablespoon salt, or as needed
  • 1 large onion, finely chopped
  • 5 tablespoons white vinegar
  • 2 tablespoons white sugar
  • 1 tablespoon rapeseed oil
Instructions:
  • In a saucepan, simmer celeriac pieces with water and 1 tablespoon salt until tender, for 15 to 20 minutes. Drain, reserve liquid, and let cool for about 1 hour. Dice celeriac and mix with onion in a bowl.
  • Combine the chilled cooking liquid, vinegar, and sugar. Drizzle over celeriac and onion. Drizzle with oil and toss to combine. Season with salt to taste.
