Chill overnight for a German deli-inspired shrimp pasta salad with dill, onion, and celery.
Ingredients:
  • 1 (16 ounce) package elbow macaroni
  • 1 tablespoon salt
  • 3 tablespoons white vinegar
  • 2 tablespoons white sugar
  • 1 teaspoon dried dill weed
  • 1 teaspoon dried parsley
  • 0.5 cup olive oil mayonnaise (such as Hellman's®), or more as needed
  • 0.5 lime, juiced
  • 1 teaspoon salt, or to taste
  • 2 stalks celery, diced
  • 0.5 onion, diced
  • freshly ground black pepper to taste
  • 2 (6 ounce) cans small shrimp, drained
Instructions:
  • Bring 4 quarts of water to a vigorous boil, sprinkle in 1 tablespoon of salt, then cook the elbow macaroni until al dente, stirring occasionally, approximately 8 minutes.
  • In a large bowl, mix vinegar, sugar, dill, and parsley. Use a flat spatula to gently crush the herbs and blend until the sugar dissolves. Add mayonnaise, lime juice, and 1 teaspoon of salt, whisking until smooth. Fold in celery and onion. Cover and chill in the refrigerator.
  • Rinse the pasta under cold water, then gently fold it into the dressing until evenly coated. Cover and refrigerate for 8 hours to overnight, folding the salad occasionally to ensure even absorption of the dressing. Add more mayonnaise if the pasta appears dry.
  • Incorporate the shrimp with a gentle folding motion just before serving.
