Classic potato pancakes with a delicious apple twist. Easy and quick recipe.
Ingredients:
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup milk
  • 1 teaspoon salt
  • 3 eggs
  • 3 cups finely shredded uncooked potatoes
  • 3 medium unpeeled tart cooking apples (Granny Smith, Greening, Rome, Braeburn), sliced (3 cups)
  • 1/2 cup water
  • 1/3 cup sugar
  • 1 teaspoon ground cinnamon
Instructions:
  • Combine Bisquick, milk, salt, and eggs in a large bowl until well blended. Gently fold in the potatoes.
  • Preheat griddle or skillet over medium heat or to 375°F. Test with a few drops of water - if bubbles jump around, it's ready. Grease with butter if needed.
  • Pour a generous amount of batter onto the hot griddle, spreading it slightly to form a 4-inch pancake. Cook until the edges appear dry, then flip and cook until both sides are golden brown. Keep the pancakes warm until serving.
  • Combine apple slices, water, sugar, and cinnamon in a 2-quart microwavable casserole or large microwavable bowl. Cover and microwave on High for 5 minutes. Uncover, stir, and continue microwaving uncovered for about 5 more minutes, or until apples are tender when pierced with a fork. Serve with Potato Pancakes.
