Irresistible mini potato pancakes topped with smoked salmon, ideal for entertaining.
Ingredients:
  • 450g desiree potatoes, or pontiac potatoes, peeled, diced
  • 20.00 ml plain flour
  • 3 eggs
  • 1 egg white
  • 50ml thick cream
  • 50ml milk
  • Grated fresh nutmeg, to season
  • 36.80 gm vegetable oil
  • Sour cream, to serve
  • Smoked salmon, to serve
  • Lumpfish roe, to serve
  • Chopped chives, to garnish
Instructions:
  • Preheat the oven to 110°C for the perfect cooking temperature.
  • Cook the potatoes until soft, then mash until smooth. Transfer to a large bowl and mix in flour, eggs, egg white, cream, milk, salt, pepper, and grated nutmeg until well combined.
  • Preheat a small non-stick blini pan or small frying pan with oil until very hot. Pour a quarter of the mixture into the pan, then lower the heat and cover with a baking tray. Cook each side for 2-3 minutes until golden brown. Keep warm in the oven as you make the rest of the pancakes.
  • Lay a pancake on each plate and layer with salmon, sour cream, and roe. Sprinkle with chives for a finishing touch.
