Prepare delectable salmon starters in just 20 minutes.
Ingredients:
  • 6 desiree potatoes, peeled, grated
  • 40.00 ml plain flour
  • 2.00 gm baking powder
  • 1 small onion, grated
  • 20.00 ml finely chopped flat-leaf parsley
  • 2 eggs
  • 60ml canola oil
  • 6 slices smoked salmon, halved
  • Creme fraiche, to serve
  • Salmon roe, to serve
Instructions:
  • Drain the excess water from the potato by pressing it in a sieve.
  • In a bowl, mix together flour, baking powder, onion, and parsley. Season generously with salt and pepper. Incorporate eggs and potato into the flour mixture, stirring thoroughly to combine.
  • Warm oil in a non-stick frypan on medium heat. Spoon 2 heaping teaspoons of batter into the pan for each pancake, ensuring space between each one (may need to cook in batches).
  • Flatten gently and cook for 1-2 minutes per side until golden brown. Transfer to a plate and keep warm as you cook the rest of the mixture.
  • Top each pancake with smoked salmon, a dollop of creme fraiche, salmon roe, and freshly ground black pepper before serving.
