Thanksgiving-ready sweet potato pancakes with cinnamon, curry, and cumin spices.
Ingredients:
  • 1 pound sweet potatoes, peeled
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 2 teaspoons white sugar
  • 1 teaspoon brown sugar
  • 2 teaspoons curry powder
  • 1 teaspoon ground cumin
  • 0.5 cup vegetable oil for frying
  • 0.5 cup milk
Instructions:
  • Grate sweet potatoes and let them drain for 10 minutes. Combine flour, baking powder, white sugar, brown sugar, curry powder, and cumin in a large bowl. Create a well in the center, add eggs and milk, then mix until dry ingredients are incorporated. Fold in sweet potatoes.
  • In a large skillet over medium-high heat, fry spoonfuls of the potato mixture in oil until golden on both sides, flattening with the back of the spoon. Flip only once. If browning too fast, reduce heat to medium. Keep warm as you fry the remaining pancakes.
