Potato Pancakes with Chunky Gingered Applesauce

Elevate traditional potato pancakes with spiced applesauce featuring ginger, cinnamon, and brown sugar!
Ingredients:
  • 4 medium cooking apples, peeled and coarsely chopped (4 cups)
  • 1/2 cup water
  • 1/4 cup finely chopped crystallized ginger
  • 1 tablespoon packed brown sugar
  • 1/4 teaspoon ground cinnamon
  • 1/2 cup Original Bisquick™ mix
  • 1/2 cup milk
  • 1 teaspoon salt
  • 3 eggs
  • 3 cups finely shredded peeled potatoes
Instructions:
  • Combine apples, water, ginger, and brown sugar in a 2-quart saucepan. Bring to a boil, then simmer covered for 10 to 15 minutes until apples are tender, stirring occasionally. Drain excess liquid and add cinnamon.
  • Preheat griddle or skillet on medium-high heat or electric griddle to 375°F and grease if needed. (Surface is ready when a few drops of water sizzle and evaporate on contact.)
  • Blend together Bisquick mix, milk, salt, and eggs in a large bowl until smooth. Gently mix in potatoes. Pour slightly less than 1/4 cup of batter onto a hot griddle, spreading it slightly to form 4-inch pancakes.
  • Cook until the edges are dry, then flip and continue cooking until golden brown. Serve with delicious warm or cold applesauce.
