Polish potato pancakes with a spicy Mexican beef chorizo twist.
Ingredients:
  • 3 russet potatoes, peeled
  • 2 eggs, lightly beaten
  • 1 teaspoon vegetable oil
  • 1 (1 pound) package beef chorizo
  • 1 yellow onion, diced
Instructions:
  • Grate potatoes, squeeze out extra water using a dish towel. Combine in a large bowl with eggs. Season generously with salt and pepper.
  • In a large skillet over medium heat, warm 1 teaspoon of oil. Cook chorizo until browned, about 4 to 5 minutes, then drain, keeping 1 teaspoon of grease in the skillet. Add onion and cook until translucent, around 4 minutes. Combine with potatoes.
  • In a hot skillet with 1 tablespoon oil, cook heaping tablespoonfuls of the potato mixture until golden brown on both sides, about 2 minutes each. Repeat with the rest of the potato mixture. Drain on paper towels.
