Chewy rolls with a hearty texture - a delight to savor.
Ingredients:
  • 2 tablespoons active dry yeast
  • 1 tablespoon white sugar
  • 2.5 cups warm water (110 degrees F)
  • 2 tablespoons shortening
  • 2 teaspoons salt
  • 7 cups all-purpose flour
  • 3 egg whites, stiffly beaten
  • 1 egg white (for egg wash)
  • 2 tablespoons cold milk
Instructions:
  • In a large mixing bowl, combine yeast and sugar with warm water until creamy. Allow to sit for about 10 minutes.
  • Combine shortening, salt, and 3 cups of flour in a mixing bowl. Beat with a dough whisk or heavy spoon for 2 minutes. Gently fold in egg whites. Gradually incorporate flour 1/4 cup at a time until the dough forms a mass and starts to pull away from the bowl. Transfer the dough onto a floured surface and knead for 8 to 10 minutes, adding more flour as needed, until the dough is smooth, elastic, and bubbly.
  • Oil a large mixing bowl, place the dough inside, and coat it with oil. Cover with a damp cloth and let it rise in a warm place until doubled in volume, approximately 1 hour. Deflate the dough, shape it into a round, and let it rise again until doubled, about 45 minutes.
  • Preheat the oven to 425 degrees F (220 degrees C). Gently release any excess air from the dough and transfer it to a lightly floured surface. Divide the dough into 24 even pieces and shape them into oval rolls approximately 3 1/2 inches in length. Arrange the rolls on lightly greased baking sheets, cover, and allow them to double in size, about 40 minutes.
  • 1. Preheat oven with an empty baking sheet on the bottom rack. 2. Whisk egg white and 2 tablespoons of milk in a small bowl for the egg wash. 3. Gently brush the risen rolls with the egg wash. 4. Place 1 cup of ice cubes on the hot baking sheet in oven. 5. Quickly transfer the rolls into the oven.
  • Bake at 425 degrees F (220 degrees C) until golden brown on top, about 20 minutes. Transfer to a wire rack to cool.
