Citrusy lime juice cures fresh fish for a gourmet appetizer.
Ingredients:
  • 500g boneless white fish fillets, skin removed, chopped into 1cm pieces
  • 4 limes, juiced
  • 1 small red chilli, seeded, thinly sliced
  • 1 small red onion, thinly sliced
  • 6 vine-ripened tomatoes, skin removed, seeded, chopped
  • 40.00 ml coriander leaves, plus extra to serve
  • 1 avocado, peeled, flesh diced
  • Sweet chilli sauce, to serve
  • Coconut cream, to serve
  • Lime wedge, to serve
Instructions:
  • - In a glass dish, marinate the fish with lime juice and refrigerate for 1 hour. - Stir in chilli, onion, tomato, coriander, and avocado. - Use a pastry cutter to shape the mixture on the plate. - Remove the cutter and drizzle sweet chilli sauce and coconut cream around it. - Garnish with extra coriander and serve with a lime wedge.
