Experience the vibrant flavors of Latin America with this refreshing red snapper ceviche. Marinate in zesty lime and lemon juices, then enjoy in corn tortillas or with crispy chips.
Ingredients:
  • 2 pounds fresh, deboned red snapper (or other firm-fleshed fish) fillets, cut into 1/2-inch pieces
  • 1/2 cup freshly squeezed lime juice
  • 1/2 cup freshly squeezed lemon juice
  • 1/2 red onion, finely diced
  • 1 cup chopped seeded fresh tomatoes
  • 1 serrano chili, seeded and finely diced
  • 2 teaspoons kosher salt
  • Pinch ground oregano
  • Dash Tabasco or a light pinch of cayenne pepper
  • To serve:
  • Cilantro
  • Avocado
  • Tortillas or tortilla chips
Instructions:
  • Prepare the ceviche: Layer fish, onion, tomatoes, chili, salt, Tabasco, and oregano in a non-reactive dish like Pyrex or ceramic. Pour lime and lemon juice over the ingredients and cover the dish with plastic wrap.
  • Marinate: Cover and refrigerate for 1 hour to allow the fish to absorb the zesty lime and lemon juices. Continue marinating for several more hours to enhance the flavors. As it marinates, watch for the transformation from pinkish grey to opaque white, indicating the fish is ready.
