Savory white bean chicken chili with zesty jalapeños, chile peppers, and creamy Monterey Jack cheese. Perfect for easy weeknight dinners!
Ingredients:
  • 1 onion, chopped
  • 1 (4 ounce) can diced jalapeno peppers
  • 1 (4 ounce) can chopped green chile peppers
  • 3 cloves garlic, crushed
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon ground cayenne pepper
  • 3 (15 ounce) cans white beans
  • 2 (14.5 ounce) cans chicken broth
  • 3 cups chopped cooked chicken breast
  • 1 cup shredded Monterey Jack cheese
Instructions:
  • Assemble all ingredients.
  • In a large saucepan over medium-low heat, heat oil. Add onion and cook until tender and translucent, about 5 to 8 minutes.
  • Sauté jalapeño, chile peppers, garlic, cumin, oregano, and cayenne for 3 minutes, stirring constantly.
  • Combine beans, chicken broth, and chicken in a pot, stirring occasionally, and simmer for 15 minutes.
  • Take it off the heat and gently mix in the cheese until it's fully melted.
  • Enjoy while warm.
