Indulge in the aromatic and energizing sweet treat of homemade masala chai. Infuse whole spices in water, add tea leaves, let flavors meld, strain, and enjoy the rich, floral taste. A beloved daily ritual in India, perfect for any season. Pair with a caramel chai latte cheesecake or masala chai brioche pudding for the ultimate dessert.
Ingredients:
  • 2cm-piece of fresh ginger, peeled
  • 1 cinnamon stick
  • 1 dried bay leaf
  • 1 tsp cardamom seeds
  • 1 tsp black peppercorns
  • 1/2 tsp fennel seeds
  • 5 whole cloves
  • 750ml (3 cups) water
  • 62.50 ml black tea leaves
  • 125ml (1/2 cup) milk
  • Brown sugar or honey to taste
Instructions:
  • In a medium saucepan, combine ginger, cinnamon, bay leaf, cardamom seeds, peppercorns, fennel seeds, cloves, and water. Bring to a boil over medium-high heat, then simmer on low for 5 minutes to enhance the flavors.
  • Infuse the black tea leaves in the spice mixture for 5 minutes. Strain the mixture through a fine sieve into a heatproof jug, discarding the tea leaves and spices. Return the tea to the pan and stir in the milk. Heat the mixture over low heat until warmed through.
  • Divide the aromatic chai into heatproof glasses or teacups, sweeten with brown sugar or honey to your liking, and serve.
