Champagne white cake: a decadent treat for celebrations, made with leftover bubbly. Ideal for birthdays and showers.
Ingredients:
  • 2.75 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1.5 cups white sugar
  • 0.66666668653488 cup unsalted butter, softened
  • 0.75 cup Champagne
  • 6 large egg whites
Instructions:
  • Preheat the oven to 350°F (175°C) and grease a 10-inch round cake pan.
  • Combine flour, baking powder, and salt by sifting them in a medium bowl.
  • In a large bowl, use an electric mixer to beat sugar and butter until light and fluffy. Gradually mix in the flour mixture and Champagne in alternating additions.
  • Whisk egg whites in a glass, metal, or ceramic bowl until stiff peaks form.
  • Gently incorporate 1/3 of the fluffy egg whites into the cake batter to lighten it, then carefully fold in the rest. Transfer the batter into the prepared pan.
  • Bake until a toothpick inserted in the center comes out clean, about 25-30 minutes in the preheated oven.
