Elevate your dinner with champagne-infused oysters.
Ingredients:
  • 300ml champagne or sparkling white wine
  • 2 green shallots, finely chopped
  • 300ml double cream
  • 18 natural oysters, in the half shell
  • Freshly ground white pepper
  • Chopped fresh chives, to serve
Instructions:
  • In a small saucepan over medium-high heat, combine the champagne and shallot. Bring to a boil, then simmer for 5-8 minutes until the mixture reduces by half.
  • Lower the heat to a gentle medium-low, then pour in the cream and any oyster juice. Sprinkle in some white pepper for seasoning. Let it simmer for 20 minutes or until the sauce is reduced by half, resulting in approximately 300ml of sauce.
  • Preheat the grill to high. Divide oysters among 6 small gratin dishes. Pour cream sauce over oysters. Place dishes on large tray. Grill for 3 minutes until oysters are golden and sauce bubbles. Let cool for 2 minutes. Sprinkle with chives and serve.
