Oysters with champagne sauce

Indulge in a romantic oyster appetizer that will ignite your passion.
Ingredients:
  • 125ml (1/2 cup) champagne or sparkling white wine
  • 1 French shallot (eschalot), finely chopped
  • 125ml (1/2 cup) thickened cream
  • Freshly ground white pepper
  • Rock salt, to serve
  • 12 (1 dozen) natural oysters (such as Sydney rock oysters), in the half shell
  • Chopped fresh chives, to serve
Instructions:
  • In a saucepan over medium heat, simmer champagne and shallot until reduced by half. Stir in cream, season with white pepper, and continue simmering until sauce is thick and creamy, about 3-4 minutes.
  • Preheat the grill on high. Sprinkle rock salt over the base of 2 small heatproof serving dishes. Place the oysters on the rock salt. Pour the cream mixture over the oysters. Grill for 1-2 minutes until golden. Let them cool for 2 minutes before serving. Top with chives.
