Chana masala: Flavorful Indian comfort food, perfect for any meal. Freezes well for easy make-ahead dinners.
Ingredients:
  • 1 1/2 cups dry chickpeas (soaked overnight), or a 28-oz can low sodium chickpeas
  • 2 tablespoons vegetable oil
  • 4 whole cloves
  • 1/2 teaspoon cumin seeds
  • 1-inch piece cinnamon
  • 4 green cardamom pods
  • 1/2 cup minced red onion
  • 1 1/2 tablespoons ground coriander
  • 1 tablespoon ginger-garlic paste
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground turmeric
  • 3/4 cup chopped tomatoes
  • 1 1/2 teaspoons garam masala
  • 1/4 cup chopped fresh cilantro (garnish)
Instructions:
  • For dry chickpeas: Rinse and soak overnight in water. The next day, pressure cook in 3 cups water until tender. Set aside. For canned chickpeas: Strain, rinse, and proceed to the next step.
  • Infuse the spices: Heat oil in a Dutch oven over medium-high heat until shimmering. Add cloves, cumin seeds, cinnamon stick, and green cardamom pods; cook until oil sputters. Mix in red onion and sauté over medium heat for 5 to 8 minutes until golden. Incorporate coriander, ginger-garlic paste, salt, and turmeric, stirring constantly for 15 to 20 seconds until aromatic.
  • Prepare the chana masala by adding the chopped tomato and stirring until it forms a loose paste, cooking for 5 to 8 minutes. Introduce cooked chickpeas with their liquid or canned ones with 1 1/2 cups of water. Sprinkle with garam masala and combine well.
  • Let the flavors marry: Cook the covered ingredients on medium-high heat for 5 to 8 minutes to season the chickpeas thoroughly.
  • Serve the aromatic curry topped with fresh cilantro alongside fluffy rice or warm bread.
