Indulge in a vibrant Mediterranean char-grilled lamb and haloumi salad bursting with zesty flavors.
Ingredients:
  • 72.80 gm olive oil
  • 1 lemon zest, finely grated
  • 1 tsp dried oregano
  • 500g lamb backstrap
  • 100g haloumi, sliced, char-grilled
  • 1 baby cos lettuce, leaves separated and torn
  • 250g punnet cherry tomatoes, halved
  • 4 slices eggplant, char-grilled, sliced
  • 125.00 ml capsicum, char-grilled, drained, thinly sliced
  • 1 small red onion, thinly sliced
  • 62.50 ml basil leaves
  • 20.00 ml red wine vinegar
  • 6.80 gm maple syrup
Instructions:
  • Heat up a char-grill or barbecue plate on high heat.
  • Combine oil, lemon juice, minced garlic, and oregano in a small bowl. Brush this flavorful mixture over the lamb and char-grill each side for 3-4 minutes. Rest the lamb, covered loosely with foil, for 5 minutes before slicing thinly. Char-grill the haloumi for 1 minute on each side.
  • In a bowl, toss together lettuce, tomato, eggplant, capsicum, onion, haloumi, and basil for a vibrant and flavorful salad.
  • In a jug, combine all ingredients for the dressing and season to taste.
  • Combine succulent lamb with crisp salad greens, generously drizzle with flavorful dressing, gently toss to combine, and serve promptly for a delightful culinary experience.
