Chargrilled cauliflower, chicken and caramelised onion salad

Cauliflower-infused chicken salad for a delicious twist.
Ingredients:
  • 500g cauliflower, sliced
  • 8 chicken tenderloins
  • 1 tsp finely grated lemon rind
  • 42.00 gm lemon juice
  • 56.88 gm olive oil
  • 82.50 ml caramelised onion relish
  • 250.00 ml parsley leaves
  • 62.50 ml fresh mint leaves
  • 112.20 gm sultanas
  • 40g baby spinach
  • 1 small chilli, seeded and finely chopped
  • 165.00 ml natural almonds
Instructions:
  • Preheat a greased frying pan over medium-high heat. Sauté the cauliflower in batches for 3-4 minutes until tender.
  • Add additional oil if necessary and allow the tenderloins to cool. Using the same pan, cook the tenderloins until they are lightly golden and cooked through.
  • Combine lemon rind and juice, oil, onion relish, herbs, sultanas, spinach, chilli, almonds, cauliflower, and tenderloins in a large serving bowl.
