Lamb with grilled cauliflower steaks

Delicious juicy lamb chops paired with chargrilled cauliflower and fresh bread - a family favorite meal.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 2 garlic cloves, crushed
  • 1 lemon, zested, juiced
  • 1 head cauliflower, cut into 1.5cm-thick steaks (see tip)
  • 4 Lamb Forequarter Chops
  • 20.00 ml pine nuts, toasted
  • 20.00 ml flaked almonds, toasted
  • 20.00 ml chopped basil
  • 20.00 ml chopped flat-leaf parsley
  • 20.00 ml finely grated parmesan
  • Extra virgin olive oil, extra, to serve
  • Coles Bakery Stone Baked Pane Di Casa Baguette*, to serve
Instructions:
  • In a shallow bowl, mix together oil, garlic, lemon zest, and lemon juice. Coat cauliflower steaks in the mixture and season. Transfer cauliflower to a plate, then coat lamb in the oil mixture.
  • Preheat a barbecue grill or chargrill on high. Grill the lamb for 4 minutes on each side for medium doneness or to your preferred level of doneness. Place on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Grill the cauliflower steaks for about 5 minutes on each side until they become beautifully charred and tender.
  • Mix together the pine nuts, almonds, basil, parsley, and parmesan in a bowl. Sprinkle the lamb and cauliflower steaks with the nut mixture. Drizzle with extra oil, season, and serve with bread.
