Delicious grilled lamb skewers recipe.
Ingredients:
  • 12.00 gm sesame seeds
  • 2 tsp sumac
  • 1/2 tsp ground allspice
  • 2 garlic cloves
  • 600g diced lamb
  • 250g baby green beans
  • 1/2 quantity Roasted cauliflower with garlic (see related recipe)
  • 1 small red onion, thinly sliced
  • 187.50 ml Greek Style Yoghurt
  • 21.00 gm lemon juice
  • 1/2 tsp sumac
Instructions:
  • In a small bowl, mix together sesame seeds, sumac, and allspice. In a large bowl, combine half of the oil with garlic. Add lamb and toss until coated. Thread lamb onto skewers and sprinkle all over with the sesame seed mixture.
  • Create a flavorful Garlic Yoghurt Dip by mixing together yoghurt, minced garlic, fresh lemon juice, and sumac in a small jug. Add a pinch of salt and pepper to taste.
  • Preheat a barbecue plate or chargrill over medium-high heat. Grill the skewers in batches, turning occasionally, for 6 to 8 minutes for medium doneness or until desired level of doneness is reached.
  • Cook beans in boiling water until tender. Drain and rinse under cold water. Combine beans, cauliflower, and onion in a bowl. In a small bowl, mix lemon juice, oil, and garlic. Season with salt and pepper. Pour over the salad and toss gently to combine.
  • Serve the skewers alongside a fresh salad, a flavorful garlic yogurt dip, and lemon wedges.
