Delicious and nutritious lamb steak dinner, perfect for a low GI, low calorie, diabetes-friendly meal.
Ingredients:
  • 500g kumara (orange sweet potato), peeled, cut into 3cm pieces
  • 600g eggplant, cut into 4cm pieces
  • Zest and juice of 1 lemon
  • 45.50 gm olive oil
  • 3 garlic cloves, crushed
  • 5.00 gm piri piri seasoning
  • 300g can chickpeas, rinsed, drained
  • 40.00 ml chopped parsley
  • 4 lamb leg steaks
Instructions:
  • Preheat your oven to 220°C while you beautifully lay out the kumara and eggplant on a generously sized baking tray lined with parchment paper.
  • In a small bowl, mix together lemon zest, lemon juice, 2 tablespoons of olive oil, garlic, and piri piri. Drizzle half of the mixture over the vegetables and toss to coat. Roast for 20 minutes. After 20 minutes, add chickpeas and roast for an additional 5 minutes. Stir parsley into the reserved lemon mixture and set aside.
  • Coat the lamb with the remaining olive oil. Preheat the chargrill to medium-high heat. Grill the lamb for 3 to 4 minutes on each side. Serve with vegetables and top with the leftover lemon mixture.
