Irresistible holiday sweet potato casserole with marshmallows, coconut, and pecans. Perfect for Thanksgiving. Easy to make with fresh or canned sweet potatoes. Top with delicious topping while baking.
Ingredients:
  • 4 cups sweet potatoes, peeled and cubed
  • 4 eggs, beaten
  • 0.75 cup margarine, melted
  • 1 cup evaporated milk
  • 1 teaspoon ground nutmeg
  • 2 cups miniature marshmallows
  • 1 cup flaked coconut
  • 1.5 cups crushed cornflakes cereal
  • 0.5 cup packed brown sugar
Instructions:
  • Preheat your oven to 400 degrees F (200 degrees C, gas mark 6) while generously buttering a 9x13 inch baking dish.
  • In a large bowl, mash the sweet potatoes with sugar, eggs, 3/4 cup of margarine, evaporated milk, nutmeg, cinnamon, marshmallows, and coconut until well combined. Spoon the mixture into the baking dish.
  • Bake in the preheated oven for about 20 minutes until the sweet potatoes are tender.
  • Combine crushed cornflakes, brown sugar, pecans, and remaining 3/4 cup of margarine in a small bowl. Spread the mixture over the baked casserole.
  • Place the casserole back into the preheated 400°F (200°C) oven and bake for another 10 minutes.
