"Mouthwatering steak tacos with zesty salsa."
Ingredients:
  • 700g beef rump steak, trimmed
  • 36.40 gm extra virgin olive oil
  • 2.50 gm ground cumin
  • 1 tsp dried oregano
  • 8 flour tortillas
  • 2 tomatoes, chopped
  • 1/2 small red onion, finely chopped
  • 1/2 green capsicum, finely chopped
  • 4 radishes, thinly sliced
  • 42.00 gm lime juice
  • 100g reduced-fat fetta, crumbled
  • 125.00 ml fresh coriander sprigs
Instructions:
  • Drizzle beef with half of the oil, then massage with a blend of cumin, oregano, and garlic. Let it sit for a while.
  • Heat up a barbecue grill or chargrill pan over medium-high heat. Grill tortillas for 30 to 40 seconds on each side until they are nicely charred and warm. Place on a plate and cover with foil to keep them warm.
  • Grill beef for 4 minutes on each side for a perfect medium cook, or adjust to your preference. Tent with foil and let it rest for 5 minutes before slicing thinly.
  • In a medium bowl, toss together tomato, onion, capsicum, radish, juice, and the remaining oil. Fill tortillas with beef, salsa, feta, and garnish with fresh coriander sprigs before serving.
