Fast Mex shaking beef

Try our speedy Mex Shaking Beef with charred corn and chipotle chili sauce for a delicious midweek dinner.
Ingredients:
  • 2.50 gm caster sugar
  • 40.00 ml tequila
  • 42.00 gm fresh lime juice
  • 500g beef scotch fillet, cut into 2cm pieces
  • 60ml (1/4 cup) extra virgin olive oil
  • 2 corncobs, husks and silk removed
  • 300g (3 cups) finely shredded red cabbage
  • 4 radishes, thinly sliced
  • 1 small red onion, cut into thin wedges
  • 1 small bunch fresh coriander, leaves picked
  • 4 whole pickled jalapeños in brine
  • Chipotle chilli sauce, to serve
  • Soft tortillas, to serve
  • Lime wedges, to serve
Instructions:
  • In a glass or ceramic bowl, mix garlic, sugar, 1 tablespoon of tequila, and 1 tablespoon of lime juice until sugar dissolves. Add beef and toss to coat. Cover and let marinate for 10 minutes.
  • Heat 1 tablespoon of oil in a large frying pan over medium-high heat. Add the corn and cook for 4-5 minutes until slightly charred, turning occasionally. Transfer the corn to a cutting board and use a long sharp knife to cut off the kernels in large pieces.
  • In a large bowl, mix together the cabbage, radish, and onion. Drizzle 1 tablespoon of oil and the remaining 1 tablespoon of lime juice. Season with spices. Toss everything together until well combined.
  • Heat 1 tablespoon of oil in a hot, large frying pan until it's sizzling. Lay the beef mixture in a single layer and let it cook undisturbed for 2 minutes.
  • Toss beef in the pan and cook for an additional 2 minutes. Pour in the remaining 1 tablespoon of tequila and cook briefly. Divide beef, cabbage mixture, corn, jalapeños, and coriander among plates. Drizzle with sauce and serve with warmed tortillas and lime wedges.
