Quick Tex-Mex casserole with taco seasoning, tomato sauce, and black beans - perfect for a fast weeknight dinner.
Ingredients:
  • 0.5 pound ground beef
  • 1 tablespoon butter
  • 0.5 cup diced onion
  • 2 tablespoons taco seasoning
  • 1 (8 ounce) can tomato sauce
  • 1 cup chicken broth
  • 0.5 (15.25 ounce) can corn, drained
  • 0.5 (15 ounce) can black beans, rinsed and drained
  • 0.5 (5.6 ounce) package Spanish rice mix (such as Knorr®)
  • 0.25 cup salsa
  • 0.5 cup shredded sharp Cheddar cheese
Instructions:
  • Preheat the oven to 350°F (175°C).
  • Heat a skillet over medium-high heat. Brown the ground beef until crumbly for about 6 minutes, stirring occasionally. Drain off any excess grease.
  • In a skillet, melt butter and saute onion until soft and fragrant, about 5 minutes. Add taco seasoning and tomato sauce, stir to combine. Mix in broth, corn, black beans, Spanish rice mix, and salsa until fully incorporated.
  • Prepare the casserole dish with nonstick cooking spray. Transfer the beef mixture into the dish and sprinkle with Cheddar cheese.
  • Bake until the cheese is gooey and the filling is bubbling, approximately 20 minutes in the preheated oven.
