Tex-mex sausage rolls

Elevate nacho night with a delicious twist: Nacho-flavored sausage rolls for a fun and flavorful meal!
Ingredients:
  • 300g beef mince
  • 150g sausage mince
  • 1 small carrot, peeled, grated
  • 1 small zucchini, grated
  • 25g packet Mexican spice mix
  • 125g (1/2 cup) refried beans
  • 2 eggs, lightly whisked
  • 4 sheets puff pastry, partially thawed
  • 175g packet cheese corn chips, lightly crushed
  • 20g (1/4 cup) finely grated parmesan
  • Chunky tomato salsa, to serve
  • Sour cream, to serve
  • Chopped fresh coriander leaves, to serve (optional)
Instructions:
  • 1. Preheat your oven to 210C (190C fan forced) and line 2 large baking trays with parchment paper. 2. In a large bowl, mix together the beef and sausage mince. Add in the carrot, zucchini, garlic, spice mix, beans, and half of the egg. 3. Season the mixture and thoroughly combine all the ingredients. 4. Divide the mixture into 4 equal portions.
  • Slice a pastry sheet in half. Lightly brush with beaten egg. Connect the two shorter ends by pressing gently to seal. Spread a portion of the mince mixture in a long sausage shape along one long edge. Roll up the pastry to cover the filling. Create a circular coil shape, ensuring the end is tucked underneath to seal it. Place on a baking tray and repeat the process with the rest of the ingredients.
  • Brush the rolls with a golden egg wash, then generously top them with crunchy corn chips. Bake until beautifully golden and cooked through, about 35-40 minutes.
  • Top the sausage rolls with a generous sprinkle of Parmesan and serve with salsa, sour cream, and coriander as optional garnishes.
