Charred lamb chops with Greek salad

Quick and tasty charred lamb chops with Greek salad, tzatziki, and lemon zest.
Ingredients:
  • 8 Lamb Loin Chops, excess fat trimmed
  • 5.00 gm ground paprika
  • 3 tsp dried oregano
  • 1 red capsicum, seeded, coarsely chopped
  • 1 Lebanese cucumber, halved lengthways, thinly sliced
  • 200g Perino tomatoes, halved
  • 1 red onion, thinly sliced
  • 20.00 ml red wine vinegar
  • 100g reduced-fat fetta, crumbled
  • 75g olive
Instructions:
  • In a large bowl, mix together the lamb, paprika, 2 teaspoons of oregano, and half of the oil. Season with salt and pepper, then toss everything together until well combined.
  • Preheat a chargrill over medium-high heat. Grill the lamb for 2 minutes on each side for a medium cook, or until done to your preference. Place the lamb on a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Combine the capsicum, cucumber, tomato, and onion in a large bowl. Drizzle with vinegar and remaining oil. Season to taste. Sprinkle with feta, olives, and remaining oregano. Serve promptly with the lamb.
