Chasen’s Famous Chili

Indulge in a savory Chasen's chili, brimming with pinto beans, ground beef, and pork, all simmered to perfection with rich Muir Glen™ tomatoes.
Ingredients:
  • 1 cup dried pinto beans, sorted, rinsed
  • 3 cups water
  • 1 can (28 oz) Muir Glen™ organic fire roasted crushed tomatoes
  • 1 tablespoon vegetable oil
  • 2 cups chopped red bell peppers
  • 2 cups chopped onions (2 large)
  • 1/4 cup chopped fresh Italian (flat-leaf) parsley
  • 2 cloves garlic, finely chopped
  • 1 1/4 lb ground beef round
  • 1/2 lb lean ground pork
  • 3 tablespoons chili powder
  • 1 teaspoon salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon freshly ground pepper
Instructions:
  • Place beans in a 4- to 5-quart Dutch oven and cover with water by 2 inches. Bring to a boil and simmer for 2 minutes. Remove from heat, cover, and let sit for 1 hour. Drain beans before using.
  • Pour 3 cups of water into the beans and bring to a boil. Lower the heat, cover, and let it simmer until the beans are tender, about 1 hour and 30 minutes. Add tomatoes and cook for an additional 5 minutes.
  • In a large nonstick skillet, heat oil over medium-high heat. Sauté bell peppers and onions for 8 minutes until tender. Stir in parsley and garlic for 1 minute. Then add beef, pork, chili powder, salt, cumin, and pepper. Cook for 8 minutes until meat is fully cooked, stirring occasionally.
  • Combine the seasoned meat with the flavorful beans. Bring to a boil, then lower the heat. Cover and simmer for 30 minutes.
