Quick and easy microwave winter pudding with cinnamon sugar topping. Soft custardy center with a spongy texture, made with simple ingredients like sourdough bread. Perfect for using up leftovers. Ready in just 5 minutes.
Ingredients:
  • 4 slices White Vienna Sourdough, cut into cubes
  • 2 Eggs
  • 125ml (1/2 cup) Full Cream Milk
  • 55g (1/4 cup) Caster Sugar
  • 4.40 gm Bake & Create Vanilla Extract
  • 0.63 gm Cinnamon Ground
  • 50g Unsalted Butter, melted
  • Coles Finest Pure Canadian Maple Syrup, to serve
  • Coles Cinnamon Sugar, to serve
Instructions:
  • Butter the two 250ml (1 cup) microwave-safe mugs. Divide the bread between the mugs. Whisk eggs, milk, sugar, vanilla, cinnamon, and melted butter together in a jug using a fork.
  • Evenly distribute the milk mixture into the mugs without stirring. Allow it to soak for 2 minutes.
  • Microwave on High for 3-4 minutes until puffed and fully cooked. Allow to rest for 1 minute, then drizzle with maple syrup and sprinkle with cinnamon sugar before serving. Enjoy!
