Cheat’s Thai chicken curry

Whip up a quick and flavorful Thai chicken curry in just 20 minutes with some clever shortcuts.
Ingredients:
  • 120g pea
  • 18.20 gm peanut oil
  • 100g curry paste
  • 400ml can coconut milk
  • 100g green beans, trimmed, halved crossways
  • 24.40 gm fish sauce
  • Steamed jasmine rice, to serve
  • 1 Hot Roast Chicken, cut into pieces
  • Coriander leaves, to serve
  • Long red chilli, thinly sliced, to serve
  • Lime wedges, to serve
Instructions:
  • In a medium saucepan over medium heat, heat the oil until shimmering. Stir in the curry paste and cook for about 1 minute until fragrant. Pour in the coconut milk and bring to a boil.
  • Toss in the peas and beans, and stir occasionally for 3-4 mins until tender. Finish by stirring in the fish sauce.
  • Portion out the rice and chicken onto individual plates. Drizzle the sauce over each serving. Garnish with fresh coriander, sliced chili, and lime wedges before serving.
