Cheat's banana bread cheesecake

Transform store-bought banana bread into a stunning cheesecake dessert.
Ingredients:
  • 550g banana bread, ends trimmed, cut into 1cm slices
  • 9.00 gm gelatine powder
  • 62.50 gm boiling water
  • 500g cream cheese, softened
  • 118.80 gm dark brown sugar
  • 1.25 gm ground ginger
  • 4.40 gm vanilla extract
  • 300ml thickened cream
  • 40g butter
  • 3 small bananas, peeled, halved lengthways
  • Extra 90.00 gm dark brown sugar
  • Extra 300ml thickened cream
Instructions:
  • Prepare a 22cm round springform pan by greasing and lining the base with baking paper, then greasing the sides. Line both the base and sides of the pan with banana bread, trimming to fit perfectly. Refrigerate until ready to use.
  • Pour boiling water into a small heatproof jug. Sprinkle gelatine over the water and stir until fully dissolved. Let it cool for 5 minutes before using.
  • With an electric mixer, whisk together cream cheese, sugar, spices, and vanilla until creamy. Gradually pour in cream, whisking until slightly thickened. While mixing, pour in gelatine mixture until just combined. Transfer the mixture into a pan and chill in the refrigerator for 6 hours until firm.
  • In a medium frying pan over medium heat, melt butter. Place bananas cut-side down and cook for 2 minutes until lightly browned. Flip bananas and cook for 1 more minute. Transfer to a plate. Add extra brown sugar and 1/4 cup extra cream to the pan. Stir and cook for 2 minutes until the sauce thickens.
  • Whip the remaining extra cream with an electric mixer until soft peaks form. Transfer the cheesecake to a serving platter and garnish with whipped cream, caramelized bananas, and caramel sauce. Enjoy!
