Cheat's caramel apple pie

Quick and delicious banoffee-inspired apple pie ready in 1 hour.
Ingredients:
  • 250g Nice biscuits
  • 125g butter, melted
  • 5.00 gm ground cinnamon
  • 380g can Top ‘n’ Fill caramel
  • 60g butter, chopped
  • 5 Jazz apples, cored, unpeeled, thinly sliced
  • 125.00 ml salted caramel topping, plus extra to drizzle
  • 600ml thickened cream, whipped
Instructions:
  • Prepare the pie dish by greasing a 5cm-deep, 19cm base, 23cm top dish. Pulse biscuits in a food processor until fine crumbs form. Add melted butter and 1/2 teaspoon cinnamon. Blend until mixture is combined. Set aside 1 tablespoon of the biscuit mixture. Press the rest into the base and sides of the dish. Chill in the refrigerator for 30 minutes.
  • Preheat your oven to 180C (160C fan-forced).
  • Put the Top 'n' Fill caramel in a bowl and whisk it until it's smooth. Spread the caramel over the biscuit base in a pie dish. Bake for 15 minutes or until the crust begins to turn golden. Let it cool completely before serving.
  • In a large frying pan over medium-high heat, melt butter and add chopped apple. Cook, stirring occasionally for 10 to 12 minutes until apple softens. Stir in caramel topping and remaining cinnamon. Cook for an additional 3 to 4 minutes until topping thickens and coats the apple. Let it cool before serving.
  • Spread half of the apple mixture over the caramel layer. Dollop whipped cream on top of the apples. Chill in the refrigerator for 1 hour.
  • Layer the remaining apple slices neatly on the top of the pie. Generously drizzle with additional caramel topping. Sprinkle the reserved biscuit mixture on top. Serve and enjoy your delicious pie.
